Upcycled Gift Bag and A Yummy Chocolate Brownies Recipe

The gift box (see tutorial on ‘gift box’) the chocolate brownies are in below is made from a  bag we received with goodies in for Christmas.  The recipe is taken from Hugh Fearnley-Whittingstall and Fizz Carr’s ‘The River Cottage Family CookBook (2005)’.  I love it for its simplicity and no fuss approach.  If I get a craving which is not that often, she says, for something choclolaty and sweet it is chocolate brownies I want- Yum – true naughtiness!  Here is the recipe and the how to’s:

250g of good dark chocolate

200g butter (unsalted)

200g caster sugar

3 eggs

125g flour

50g cocoa powder

broken walnuts (optional)

half tsp baking powder (optional)

foil lined baking tin (20cm x 30cms – at least 2cm deep)

small saucepan

two mixing bowls

Heat the oven to160 degrees C / gas mark 3.  Fill a small saucepan with a few cm of water and bring to boil.  Lower the heat until it the water is at a simmer.

Break up the chocolate into small pieces and put it into a bowl over the pan of simmering water.  Add the butter to this same bowl also cut into small pieces.

In another bowl put the sugar and eggs.  Beat the eggs into the sugar until the mixture looks smooth and creamy.  (do not over beat, as adding to much air into the mixture will affect the outcome of the brownie putting big air holes into it.)

The chocolate mix should now be melted, stir it so it melts together – do not overwork

Add the chocolate mix to the egg mix.  Stir until all is amalgamated.

Sift the flour and cocoa powder into the mix.  At this point I added a half teaspoon of baking powder to my flour.  Stir in the walnuts (optional)

Line a baking tray with foil and pour in the mixture.

bake for 20-25minutes or until the mixture has set.  Placing a knife into it, the knife should come out a little moist.

Leave to cool on cooling rack.

EAT – Yum Yum! And or Give Away as Present for the Post Christmas Blues or Hurrah s…’glad that’s all over!’ feeling.
