Recipe of the Week – Lemon Drizzle Cake

This recipe is another of my favourites.  It comes from Tana Ramsey bbc good food, and only has five ingredients, three of which all have the same weight measure, I love it already.

225g Unsalted Butter (Softened)

225g Caster Sugar

4 eggs

Zest of one Lemon, I use two lemons, to give it a bit more of a lemon kick

225g Self Raising Flour

8cm by 20cm loaf tin and greaseproof paper

Set oven temp at 180degrees centigrade (160 for fan oven) or gas mark 4

Beat the sugar and butter until smooth and creamy

Add the eggs slowy, one at a time

Sift in the flour

Then the lemon zest

Spoon mixture into a greaseproof lined 8cm by 20cm loaf tin and bake at 180degrees centigrade for 45-50minutes

Whilst cooling make ‘drizzle’ with caster sugar and lemon juice.

Use a skewer to make holes in the cake and pour drizzle over.

A delicious treat to eat!
